Essential yeast extract is made using an autolytic process using natural enzymes from within the "brewer's" yeast itself (Saccharomyces cerevisiae). Other brands can produce yeast extract by hydrolisation (using hydrochloric acid to crack yeast cells) then sodium hydroxide for neutralisation, resulting in increased sodium chloride concentration. For this reason, Essential yeast extract is lower in salt (sodium) when compared to most other yeast extracts. It is also gluten-free as the yeast extract is derived from baker´s yeast grown on sugar beet molasses, not grain, a key point of difference for customers who are gluten intolerant or celiac.
